Cajun Petite Pois

This is the pot she uses Chopped garlic!! Yum. Final dish!

1.) start off with a roux
2.) once your roux is starting to take add about 8 onions and one whole garlic chopped
3.) let cook down real good
4.) after about an hour to an hour and a half of adding water and stirring (or however you like your roux- for this dish i like it not so dark) add abut 10 cans of small sweet green peas.
5.) Let this cook down abut 30-45 minutes, then as your ingredients are very hot - MAKE SURE YOU ARE NOT AT A RIGOROUS BOIL - add your eggs (however many you like- i use at least a dozen) by breaking them gently into the dish.

It is important that your ingredients are not boiling hard, because then your eggs will disappear into the dish. You want them to cook whole. This recipe was told to me verbatim by my grandmother. It is my favorite dish. She usually makes it with homemade mashed potatoes!! YUM!
