Jambalaya
2lbs smoked sausage
1/2 c oil
1 large onion chopped
2 stalks celery chopped
1 medium bellpepper chopped
2 c uncooked rice
4 cups water
salt, pepper, and cayenne to taste
green onions and parsley to taste
-Cut sausage into four inch links and boil in two quarts of water for 25 minutes. draind and slice
-Brown sausage in heavy skillet in cooking oil until well-browned
-Add onion and celery and bellpepper and cook until onion is transparent
-Add rice and water. along with seasonings. Cover and cook over low heat, stirring frequently. (If rice does not seem to be cooking thoroughly through the process, continue adding water in small amounts until cooked and no longer mushy, about one hour)
-Add green onions and parsley just before serving
